These zucchini fritters are absolutely delicious. I’ve seen them called zucchini pancakes or zucchini patties, but I think fritter just sounds better. Feel free to call them whatever sounds best to you.
I chose to put a slightly southwest spin on these with the cilantro and the chili powder. I just find that they go so well with lime, sour cream and Mexican rice, I just had to go with that vibe. I served these with the tattooed chef vegan cauliflower rice burrito mix, but I have also eaten them with just a little salsa on top and that works beautifully as well.
I would love to play around with these some more and perhaps make some different versions. Or even making them the bun to a grilled cheese, or the patty on a burger. There is just so much you can do with such a simple concept.

I never even gave it a second thought until one of my friends told me that she has the “cilantro soap gene.” Ever since, I realized that I too am getting a strong soapy flavor from cilantro. I just happen to like it. I thought cilantro tasted that way to everyone.
Come to find out, there actually is a gene that can make cilantro taste like soap. It is usually followed by a strong hatred for the herb. There are even entire websites dedicated to the collective distaste where people chat about restaurants not indicating cilantro as an ingredient or making it impossible to remove from meals.
Of course, if you have the cilantro soap gene and you don’t like cilantro. Feel free to remove it from this recipe. Or, substitute it with fresh parsley. Parsley, while in the cilantro family, has a much milder flavor. And I don’t think there are any websites dedicated to bullying it.

This happened to me quite a few times before I realized that the top and sides of a pancake will tell you exactly when it is time to flip. When the sides of a pancake firm up and begin to brown, while the bubbles on the top begin to stop forming, it is time to flip. You will get a perfect golden pancake every-time, without summoning the smoke alarm.
These zucchini fritters are not quite pancakes, but they do have a similar tell. After about five minutes of frying, you will see the lower sides of the fritters turn a golden brown. Because of their density, there likely won’t be any bubbles like in pancakes. But, try to use the sides to see when to flip. The more you do it, the better you will get at timing them.

Ingredients
- 2 zucchinis
- 2 eggs
- 1/3 cup shredded pepper-jack cheese
- 1/4 cup flour
- 3 tablespoons fresh cilantro
- 1 tablespoon olive oil
- 1 teaspoon garlic salt
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed red pepper
- 1/2 teaspoon baking powder

Step by Step Instructions
Step 1
In a bowl lined with paper towels, shred zucchinis using the largest side of a cheese grater. Then, use the paper towels to squeeze the zucchini, removing as much liquid as possible.
Step 2
Once dry, add zucchini to a bowl along with chopped cilantro, eggs, flour, olive oil, cheese, baking powder and seasonings. Mix well.
Step 3
In a large saucepan, heat a generous drizzle of olive oil on medium high heat. Add 1/4 cup sized dollops of the mixture. about 1 inch apart.
Step 4
When the fitters begin to turn brown around the edges, give them a flip. You should be able to pan fry 8 to 10 small fritters. Top with more cilantro and enjoy.
